Quick freezing refers to putting the pre-treated food into a device with a temperature ranging from -30 °C to -40 °C. Within 30 minutes, the food passes through the zone where the largest ice crystals are formed, rapidly reducing the central temperature of the food from -1 °C to -5 °C. The diameter of the ice crystals formed is less than 100 μm, which will not seriously damage the cellular tissues, thus preserving the original juice and flavor of the food. After quick freezing, the central temperature of the food must reach below -18 °C. When the average temperature reaches -18 °C, the freezing processing work is completed.
Hot air drying uses hot air as the drying medium and conducts wet and heat exchange with food in a way of natural or forced convective circulation. The moisture on the surface of the materials, that is, water vapor, diffuses towards the main body of the air flow through the surface gas film. Meanwhile, as a result of the vaporization on the surface of the materials, a moisture gradient difference is generated between the inside and the surface of the materials. Therefore, the moisture inside the materials diffuses towards the surface in the form of vapor or liquid.
